However, completely sweet varieties of Scotch bonnet called cachucha peppers are grown on some of the Caribbean islands. These peppers are used to flavor many different dishes and cuisines worldwide and are often used in hot sauces and condiments. The Scotch bonnet has a sweeter flavor and stouter shape, distinct from its habanero relative with which it is often confused, and gives jerk dishes (pork/chicken) and other Caribbean dishes their unique flavor. Fresh, ripe Scotch bonnets can change from green to yellow to scarlet red; some varieties of this pepper can ripen to orange, yellow, peach, or even a chocolate brown.

How to Care for the Plant

Water
When leaves appear on the plant, water as needed to keep the soil evenly moist. Never let the plant dry out. Stop watering the plant when the leaves start to die back. Resume watering when the leaves reappear next season.
Pruning
Prune your caladium sparingly throughout the growing season. Harvest leaves for inclusion in household floral arrangements by cutting down the stem at the soil line. Prune away any damaged, browning or dead leaves by cutting at the soil line. Chop off all foliage only after digging up the corm for winter storage.
Fertilizer
Fertilize the plant weekly during the growing season with liquid fertilizer or use slow-release pellets.

Although caladiums can tolerate temperatures below 70 F, they won't grow as well or as large. They can tolerate temperatures as low as 45 F, but they do best when the average daytime temperature remains above 70 F and the average nighttime temperature remains above 60 F.
