Though these plants belong to the same family and share the same flavor profile, there are a few key differences between the plants. Summer Savory is an annual plant, whereas Winter Savory is a perennial that returns yearly.
Summer Savory is said to have a milder but more flavorful flavor than Winter Savory. However, as the plant can only be grown over the summer months, many people opt for the Winter Savory instead, as it is a little less maintenance. Also, Summer Savory is a relatively compact grower, reaching roughly 1-2 feet (30-60 cm) in height, and native to the Eastern Mediterranean area. The plant features small dark-green foliage and produces small white or pink blooms in mid-summer, followed by seeds that can be gathered for future planting.
