When I deadhead it, do I cut the dead flower bloom off or the entire stem?

Yes you should cut off the dead roses thats how you dehead them with sheers or scissors to promote more growth such as leaves and flowers. Keep the stems unless its dead when its brown and dried. I have experience with my knockoff rose when theres dead roses and it produces more buds, and The roses are so pretty I love the yellow!
