Does anyone know how to take care of these little beasts that have taken over my mint?

You should use nettle extract with insecticidal function, it is organic and at the moment for my mint it is working

I would isolate the plant
Spray it with water a stable spoon of vinegar and a squirt of dish washing liquid. Don’t let the spray reach the soil.
